JOB DETAILS:
Head Chef– 5* property – Lower Zambezi, Zambia
A brand new 5* lodge is being built on the Lower Zambezi. It will be one of the most luxurious in the region and is set to become the top safari destination on the Lower Zambezi. This is a very exciting opportunity to become part of a brand-new team, starting from the ground up. This magnificent property will officially open its doors to its first international Guests early next year and successful candidates will commence work from January 2022.
We are looking to recruit staff at all levels for the Lodge, but one of the most critical at this stage is for the Head Chef.
Minimum Requirements:
• Solid experience as a Head Chef in a 5-star bush/safari establishment
• A relevant tertiary qualification
• Must be prepared to live-n
• Thrives in a remote environment
• Passionate about customer service and delivering the bestbest experience
• Passionate about the African Bush, conservation and wildlife
• Driven, energetic, compassionate and ambitious, with strong leadership and mentoring skills.
• Unrelenting attention to detail and high standards.
• Structured manager with experience of leading diverse teams.
• Open minded and able to think outside of the box.
• The ability to motivate and inspire yourself and others.
• Excellent interpersonal skills and communication.
• Zambian citizens would be preferred
Duties Include:
• Training of all new kitchen staff IN kitchen procedures
• Overseeing the entire kitchen staff and making sure that all meal and tea/coffee timings are met
• All preparation and presentation of all meals for guests and announcing of meals to guests
• Menu planning and all dietary requirements are followed accurately
• Being cost conscious and assuring company cost are controlled and minimal wastage
• Ensuring cleanliness of kitchen, deep freezers and outside area including rubbish bins
• Storage, proper cleaning and maintenance of kitchen utensils and all equipment
• Re-supply of stock for guests and staff as per stock sheets
• Stock control and stock ordering
• Responsible for menu planning and being flexible looking at the condition of stock on hand and seasons
• Respect hygiene rules
