JOB DETAILS:
  Lusaka Legacy Hilltop Retreat and Conference Centre is a faith-based Christian Organisation. The property is comprised of 58 guest accommodations and 2 Presidential Suites. We are located off Great East Road, in Meanwood.
We are looking for a suitable candidate for the position of Assistant Head Chef.

Role Responsibility:
• Direct Supervision and involvement of food preparation, cost quality, quantity inventories, portion control, menu planning, recipes, and daily specials
• Assist in planning monthly kitchen budget.
• Assists in overseeing job methods and cooking standards to maintain a high quality of food and service.
• Supervise food preparation, handling, and storage in order to ensure compliance with all sanitation, health and safety requirements, including documentation and training.
• Be able to work in at least three different sections of the kitchen namely; Garde Manger, confectionery and Hot food section
• Develops standard recipes for all dishes to ensure proper portion control, uniformity of taste and quality; test new products on the market, recipes, and formulas.
• Control operating expenses through effective planning, budgeting, purchasing decisions, and inventory control methods while focusing on creative cost control and revenue-generating solutions to maximize profit.
• Monitor food production, ordering, and waste.
• Assists with the training programs, and assist with the set-up work schedules and job requirements.
• Completes market lists; orders all necessary items and inspects such foods as meat, fish, and vegetables received from markets.
• Works with other departments to coordinate special functions.
• Ensure compliance with, local and company health, safety, sanitation standards..
