JOB DETAILS:

• We at APS are looking to recruit a Chef whose responsibilities will include studying recipes, setting up menus and preparing high-quality Indian dishes. Knowledge of Indian cuisine is a must, international cuisine will be an added advantage. The incumbent should be able to delegate tasks to kitchen staff to ensure meals are prepared in a timely manner. Familiarity with sanitation regulations is essential. The position is based in Lusaka and involves travel on a regular basis. Some travel may be involved, the successful candidate may be asked to travel for the day within the city or out of the city as per requirements.
• If you have experience with advanced cooking techniques and non-traditional ingredients, we’d like to meet you. Ultimately, you’ll prepare and deliver a complete menu that delights our guests.

Responsibilities
• Professionally prepare both Indian and international cuisines
• Set up the kitchen with cooking utensils and equipment, like knives, pans, and kitchen scales.
• Study each recipe and gather all necessary ingredients.
• Cook food in a timely manner.
• Delegate tasks to kitchen staff
• Inform wait staff about daily specials.
• Ensure appealing plate presentation.
• Supervise and train cooks, assist as needed.
• Slightly modify recipes to meet customers’ needs and requests (e.g. reduce salt, remove dairy)
• Monitor food stock and place orders.
• Check freshness of food and discard out-of-date items.
• Experiment with recipes and suggest new ingredients.
• Ensure compliance with all health and safety regulations within the kitchen area.
• Preparing food and ingredients.
• Managing kitchen staff or other employees.
• Ordering kitchen food supply.
• Controlling kitchen costs.
• Cooking food and plating it.
• Meeting with guests to ensure they like their food.

Qualifications
• At least 3 years proven work experience as a professional Chef.
• Culinary school diploma preferred
• Hands-on experience with various kitchen equipment (e.g., grillers and pasta makers)
• Ability to remain calm and undertake various tasks.
• Up-to-date knowledge of cooking techniques and recipes
• Familiarity with sanitation regulations
• Valid passport and driver’s license
