JOB DETAILS:
Position Summary:
We are looking for one (01) Chef who is able to add value to our wide range of locally and naturally produced products on the Zambian market. The goal is to create a healthy country by ensuring that our esteemed clientele are served the best foods and beverages. We envision and strive to maintain our reputation, strengthen and increase our customer base, and deliver above our customers’ expectations.

Key Responsibilities:
• Responsible for planning, preparation and pricing of the Menu for the company;
• Ensures that the food production and processing section is properly staffed and assists in supervising, training and monitoring of staff;
• Demonstrates proper usage of food production equipment and correct processing techniques to staff;
• Ensures effective utilization of warehouse areas and assures proper loading, unloading, stocking and safekeeping of items to maintain the quality of finished goods in order to prevent product damage and avoid occurrence of pilferage, accidents and occupational Hazards.
• Effectively monitors flow of goods and implements First – in – First – Out (FIFO) method in the use of raw materials and in dispatching of finished goods;
• Ensures accuracy of product inventories against system records by ensuring cycle counts are conducted on a periodical basis following appropriate guidelines released by Company management;
• Ensures that there is no interruption in the food production line and mixing of every ingredient;
• Responsible for packing food items in designated containers or packages, labeling and sealing the containers and ensuring quality and freshness of the packaged foods;
• Ensures that all staff are compliant and follow sanitation rules, food processing regulations as well as safety and quality standards;
• Works closely with the Director/Manager and purchasing officer and or stores officer in developing standard purchase specifications for various items and ensures continuous availability of stock at all levels.
• Ensures regular monitoring of clients’ feedback, prompt, efficient and accurate service to all customers along with the best quality products;
• Stays informed about the new developments in the world of cuisine, recipes, cooking techniques, kitchen equipment, production processes, etc;
• Prepares high quality, nutritious meals to cater for breakfast, lunch, dinner and snacks according to client scheduling and within the menu plans and budget guidelines of the Umulyo Foods Service;
• Manages food production staff in food preparation, cleaning and general maintenance;
• Ensures CCP controls (cooking and chilling) are monitored accurately and records are filled accordingly;
• Ensures Blast Chiller and holding fridges are in good working conditions at all times and advise Maintenance in case of any faults;
• Undertakes any other relevant tasks assigned by Director/Manager.

Qualifications:
• Grade 12 School Certificate or its equivalent;
• Certificate in Nutrition, Culinary Arts, Food Production and Hospitality Industry;
• Diploma in Nutrition, Culinary Arts, Food Production and Hospitality Industry is an added advantage; must
• Certification and knowledge in food processing is sought for;
• Certificate in food costing and hands on experience in food costing a must
• Certificate and or hands-on experience in pastry/confectionery is an added advantage;
• Knowledge of nutrition, food rationing and packaging is a definite plus
• Experience in events and offering services is a definite plus;
• Knowledge of food costing and basic budget management is a pre-requisite;
• Wide knowledge of local (traditional) cuisines and their benefits;
• Affiliated to a Professional Body for Food and Hospitality Industry;
• Ability to multi-task and work with minimum supervision;
• Marketing skills and product knowledge is cardinal
• Creative, organized, detail-oriented and resourceful;
• Possess good interpersonal skills;
• Personal grooming and hygiene;
• Ability to work under pressure and meet tight deadlines;
• Pleasant personality, team player with supervisorial skills; and
• At least two (2) years relevant experience in a fast-paced environment or industry.
